The sapote is a peachlike fruit that is coming into favor. For many years there seemed to be a difficulty in growing them although Wickson tells of two old trees in Santa Barbara, one of which dates back to Mission days. It is called the "peach of the tropics" because it looks like a peach, but with greenish-yellow skin, and with seeds like an orange. It should be ripened on the tree, but only the fruits that attain that state during August and September are edible. Those, of course, are the ones that go to market. Sapotes are lacking in tartness, so they need lemon or lime juice when served as a breakfast fruit, and they combine well with fresh oranges and grapefruit in a fruit cocktail or fruit salad.
